The quantities in this can be very flexible - add more or less of anything you like.
2 chicken breasts, sliced thinly
1 tab crushed garlic
1 red chilli, chopped finely (optional)
1/2 cup snow peas, sliced
3 teas fish sauce
1 teas lime juice
Sugar, salt and pepper to taste
1 cup sliced mango
1 cup tomato, chopped
1/2 cup cashews
Stir fry chicken. Add garlic and chilli, stir fry 30 seconds.
Add snow peas, fish sauce, lime juice and seasoning.
Just before serving add mango, tomato and cashews.
Sprinkle with mint and serve with rice.
